Project: Card Catalog

Our latest, and maybe heaviest, furniture acquisition is this used card catalog. 
 
It's a bit beat up on some edges, and has various pencil and pen marks all over it, but overall it's in decent shape. I'm about to spend some time gluing some of the more bashed sections back into place.  All the spots in this photo where you can see blue tape are spots that need some glue.  Nothing is falling off or falling apart, but we'd like to keep it that way.

Second Stage Infusion

I'm just a day late here, but I don't think it will be an issue.  I've strained the bourbon infusion through a cheese cloth and a mesh strainer.  The result is on the left in this picture and it has a great color and berry flavor, if a tad weak on the bitterness I was hoping for.

A Good Shake

So here we go.  The waiting game.
I've give the jar a good shake, and it's clear that the cooked down blueberries, and the mix of chopped plant matter, have really thickened things up.  I'm figuring that after the filtering and mix of water based second infusion, it will be fine.

The Mix

And the mix begins!  The 375 ml of 101 proof bourbon will need to infuse for two week.  That's two weeks with daily shaking of the jar.

Not shown:

  • 1 teaspoon dried lemon peel
  • 1/2 teaspoon ground dried burdock root
  • 5 ground dried all spice berries
  • 1/4 teaspoon ground nutmeg

Dandelion Root

In order to ensure proper bittering and rounded flavor, I'm using this dried root as well as the fresh chopped leaves.  Yes it's a lot of dandelion, but it's what I had access to.

Milk Thistle Seeds

I was able to find milk thistle seeds at whole foods, which will hopefully ensure that the resulting bitters is properly bitter this time.  It also helps me feel confident in a more rounded and complex flavor than I might get from dandelion alone.

Zest of One Lemon

Here I've got the lemon zest, and as little pulp as possible, peeled. I also chopped it into smaller bits before it was added to the jar.
The rest of the lemon didn't go to waste either.  It ended up being juiced for an unrelated cocktail.

Chopped Dandelion

I'm using about 1 cup of coarsely chopped fresh dandelion leaves.  I'm going to be adding some dried bittering agents as well, for a more rounded flavor.

Fresh Dandelion

Series: 

Day 1

Fresh red dandelion leaves, as part of the bittering agents.
It's one of the easier ingredients to find on a store shelf, or in a park.

Cooking the Berries

Day 1

The mashed berries had a lot of liquid so I cooked them down a bit. I'm hoping this might also concentrate the flavor more.
